Recipes

Ok Ok, Easter is coming up so I thought I'd share this recipe I found on pinterest of course. Its called Banana Pudding Cake and it is beyond easy! So if your in a pinch or have quite a few dinners to go to and don't want to show up empty handed, make this! Of course it isn't particularly healthy by no means, you can make your cake with different substituions, use light cool whip and reduced fat vanilla wafers, its up to you either way its good! I made this for my cousins household shower and I was so pleased with it! Its so yummy! What was left was much to dangerous to leave at my house because I would have ate it all so I sent it to my Mamaws house! She looooves sweetening so it was a win win.

At the bottom I will have the recipe typed out where you can just copy and paste so you can print.

Your gonna need these fellas...
You will also need whatever you cake mix calls for eggs, oil, etc. Or you can be really cool and make it from scratch. I'm not that cool.
Mix up your Yellow cake mix. Preheat your oven to whatever your mix said.
Pour batter into a greased 9x13 cake pan. Isn't yellow cake mix such a pretty batter! Bake for however long your mix says to.  Once its finished and You take your cake out of the oven make up your banana pudding. Just make it like the box says you don't have to add anything special to it. Once you have it made take the handle of a small wooden spoon or something of the same size and poke holes in your cake. Go all the way to the bottom. Once you have all the holes poked this should only take your a minute or so go ahead and pour your pudding all over the cake. Within those couple minutes you let your pudding set up just a little bit, it should still be pourable.
I'm such a kid... I had so much fun making this!
Yum. I could just stop at this point and just eat that. Pop this in the fridge until its completely cool.
In the mean time you need to take 20 or so Vanilla Wafers, put them in a zip loc bag and crush away.Once your cake is cool then take your tub of cool whip and spread all over your cake and sprinkle your crushed wafers all over the top and VOILA!
I'm telling ya this is deeeelish!!

Banana Pudding Cake

1 Yellow Cake Mix (you will also need whatever your cake mix calls for)
2 3.4 oz banana or banana cream INSTANT pudding mixes (you will also need whatever you pudding mix calls for most only call for milk unless you use some sort of super fancy cool kind)
1 tub of Cool Whip
20 Vanilla Wafers

-Preheat Oven to the specifications on your Cake Mix
-Prepare your cake, you can do the healthy substitutions, make your own or just be plain jane like me and just do as the cake mix says.
-When you take your cake out of the oven start making your pudding. Again just do as the pudding mix says, that should take you a couple minutes. You want your pudding to set up just a little bit so when your done with that, take the handle of a wooden spoon or something of the same size and poke holes through the entire cake. Once thats done pour your pudding all over the cake and spread it around to make it even. Your pudding will be some set but should still be pourable.
-Once all that is done just pop the cake into the fridge and let it cool completely.
-While your waiting take 20 or so Vanilla Wafers and crush them up, I find it less messy and easier if you just put them in a zip loc bag and crush with a rolling pin.
-Once your cake is cool spread your entire tub of cool whip all over the cake evenly and then top off with your crumbled wafer cookies!
-Keep in the fridge and indulge!

I. Love. Mexican. Food.
Thats all there is to it, other then scrambled eggs it is my fav-o-rite! So I make chicken fajitas ALL the time. Obviously this probably isnt the most authentic recipe. But its good enough, fast, and easy! I make them different all the time. Sometime I bake them sometimes I make them in the crock pot or today I just threw it all in my handy cast iron skillet that my sweet cousin Audrea got me for Christmas! It really just makes my food taste better! Anyhow! Here is one version of my easy chicken fajitas!
You will need these guys:
Some of its hidden but I have a can of Fat Free Refried beans, and that Rice is whole grain Santa Fe Rice. Its good! But I would just use rice like that in a pinch, a lot of prepackaged rice is loaded in sodium. I wont be buying anymore fat free beans, most fat free stuff is filled with so many fillers that you are better off with the full fat version! I started running out of time but I usually like to make my own rice but for speed reason this all worked wonderfully! Anways, I was just cooking for Ryan and I so I only used a 1/4 of the pepper but I used most of the onion. I also like to add red bell pepper or use a purple onion but I just used what I had. Moving on!
I cut up a couple chicken breasts into small pieces you can do slices or bite size pieces... totally up to how you like your chicken. I cooked it in some olive oil and I let it cook until all of the liquid from the chicken is cooked out. While the chicken is cooking I also give it a sprinkling of salt and pepper and then I start with the fun stuff. I don't measure so i'll try to give some estimates. Throw (not literally) around a Tbs. of chili powder, Tbs. of Cumin, A Tsp. or 2 of Garlic powder and a pinch of red pepper flakes if you like some heat. Just add as you think you need it.
In the mean time thinly slice your peppers and onions. I've been creative before with different types of peppers and even added mushrooms before. Whatever your feeling will work. You could also just skip the chicken all together and do veggie fajitas. Ya cant go wrong Folks.
Once the chicken is practically done toss in your onions and peppers.
That looks soooooo yummy already! I like my onions and peppers to be fully cooked I don't really like it when they still have a little bite to them so I let them saute a little while around 4-5 minutes and then I add some more seasoning just follow the same as I did with the chicken. I let that cook another minute or so and I add a can of diced tomatoes, drained really well. The tomatoes I used had jalepeno diced up in them and they were so good! But plain or Rotel is really good to! Let that cook a few more minutes, if your satisfied with how done your veggies are just go ahead and start scooping it out to your plate if not just let it cook a little bit longer.

Then Plate it all up.
You can sprinkle some cheese over it if that floats your boat. I ate mine with whole wheat tortillas. Delicious!
